Charcuterie and Such at Rain Shadow Meats, Seattle
Ever seen such an elegant display of les viandes? Me neither, which is why I had to snap a pic of the case at Chef Russell Flint's frou-frou butchery in Capitol Hill's Melrose Market. Maybe those chops are a little pricey, but at least you'll know *exactly* where they came from (as Rain Shadow sources exclusively from Northwest sources). There's even a window into the cooler so you can see the whole sides pre-butchering too.
