Braised Pork Belly, Gordon Ramsay Pub & Grill

Pork belly is nothing uncommon these days, but this ample version was so succulent, tender, rich and peppery, I had a hard time keeping myself reserved in mixed company. Served atop an English pea puree with Cipollini onion, baby carrots, au jus and a mustard seed sauce, and nicely paired with a sweetly smooth Fox Barrel Cider.

While it still seems like this casual Ramsay concept at Caesars Palace on the Vegas Strip is still as uneven as I found it in my previous review a few weeks ago, dishes like this really show Executive Chef Jeremy Berlin at his strongest. Order this, onion ale soup and the sticky toffee pudding and you'll be in hog heaven.
